Can you believe 2016 is just about over?!  Wow what an amazing year this has been for me personally and for this little blog of mine!  I celebrated my first full year of marriage, we decided to build a new home (coming soon!) and best of all Eat Yourself Skinny has grown tremendously all thanks in big part to all of YOU!  I decided to give my site a complete face lift at the beginning of this year and I couldn’t be happier with that decision.  I have received nothing but positive feedback from everyone and I’m SO glad the new site has created a better experience for you!

2016 also had some of my most popular recipes to date so let’s check out the top 10 below!

Zucchini Noodles with Creamy Avocado Pesto

This recipe is by FAR the most popular recipe on my whole site, not to mention the most popular in 2016, and just so happens to be a personal favorite of mine.  It has been pinned more than 150,000 times (ahh!) and has been visited more than 250,000 times!  Made with all fresh, healthy ingredients, this dish gives you all your favorite flavors of “pasta” without the carbs!

Baked Chicken Fajita Roll-Ups

These roll-ups were so fun to come up with and became such a huge hit in our house that I knew they’d be well-received on the blog!  This marinade is one of my favorites that I always use for all my fajita recipes and rolling these up kept the chicken nice and juicy while the veggies stayed crisp and flavorful.  This recipe is a total winner!

Slow Cooker Chicken Fajita & Quinoa Soup

Speaking of fajitas, this chicken fajita and quinoa soup was THE most popular soup recipe on the blog this year!  You can never go wrong when using your slow cooker and I love that you can just dump everything into your pot, turn it on and come back to a delicious, flavorful meal.  It doesn’t get much easier than this!

Balsamic Roasted Brussels Sprouts

This recipe is one of my favorite side dishes and is just so darn easy to make!  The mixture of balsamic, honey and Dijon mustard not only adds a hint of sweetness, but enhances the overall flavor and caramelization of these veggies.  Definitely add this to your meal plan in 2017!

Baked Chicken Parmesan with Zucchini Noodles

Is there any surprise zucchini noodles made the top 10 again??  Spiralized veggies were such a hit in 2016 and I definitely plan on making many more recipes this coming year!  If you are a newbie to chicken parmesan then this easy recipe is for you!

Start your morning off right with my favorite Banana Breakfast Muffins!  They are perfect to grab on-the-go and are lightly sweetened with cinnamon and honey.  I always like to make a big batch for the whole week!

These lettuce wraps were inspired by my favorite dish at P.F. Changs and were such a hit this year on the blog!  The best part is the mixture for these wraps literally only take 15 minutes to make from start to finish!

Cheesy Caprese Chicken & Quinoa Casserole

Does it get much better than a cheesy casserole??  I came up with this recipe by combining all my favorite things into one dish – quinoa + caprese + casserole = deliciousness!

My Favorite Detox Salad

The title of this recipe says it all – my absolute FAVORITE, and for good reason!  This was definitely the top salad of 2016 and is close to being THE most popular salad recipe on Eat Yourself Skinny next to this southwestern salad with creamy avocado dressing.  If you haven’t tried this recipe yet, make it a must for 2017!

One Pot Spicy Sausage and Kale Soup

Last, but certainly not least, this hearty yet healthy one pot sausage soup!  You guys this dish is filled to the brim with fresh veggies and has so much flavor using just a few basic ingredients.  You can also easily make this in your slow cooker for those busy weeknights!

I couldn’t be more excited to ring in the New Year and I’m expecting it to be a great one!  I really can’t complain about 2016, but I’ve definitely got some exciting stuff in the works for this upcoming year and I’m looking forward to sharing it all real soon!  One of my main goals is to create and share recipe videos so expect to see those on the blog and Facebook in the near future.  You can also expect to see more home decor and party/entertaining posts as those have also been highly requested!  Oh and I also promise to be much better with SnapChat in 2017 because…er yeah…that was definitely one thing I completely FAILED at this year.  I mean hey, at least I know my strengths and weaknesses!
