Wow what a crazy week this has been for us!  As most of you know we’re currently building a new home, but our current house sold so quickly (within 24 hours!) that we had to be out much sooner than expected.  So we have spent the whole week packing up our entire house, patching up holes, touching up paint and let me just tell you that Blue Apron was a total life saver!

I knew I didn’t want to stock up our fridge the last week while living in our home as I didn’t want any produce to go to waste.  Plus we have been so incredibly busy that grocery shopping, meal planning and cooking just wasn’t going to happen.  That’s where Blue Apron came in!  Their easy-to-use meal delivery service couldn’t have been more convenient for us during this time and I was able to cook up some delicious dinners using wholesome farm-fresh ingredients rather than resorting to ordering pizza or take-out.  Oh and the best part is they delivered all the ingredients and recipe cards right to our doorstep in a sealed refrigerated box!

One of the great things I love about Blue Apron is that everything comes pre-measured and portioned out so not only does nothing go to waste, but it was actually extremely helpful since most of my kitchen items and measuring cups were all packed away!  I remember Chris being shocked when he came home and opened up our fridge.  He thought I had stocked up on a week’s worth of groceries because of all the vibrant produce and ingredients filling up the shelves, but I assured him that we were going to eat ALL of it and sure enough we did!

One of my favorite meals that we received in our box was this Green Garlic Pesto Pasta.  I mean talk about flavorful!  Usually when I think of pasta dishes I immediately think of a really “heavy” meal, but this recipe tasted SO light and fresh and the homemade pesto was literally to die for!  I mean the combination of arugula, garlic and lemon zest all sauteed together with a little olive oil and crushed red pepper was simple, yet incredible and we even got a generous side salad to pair with it!  Oh and the best part?  This whole entire meal took us only 30 minutes from start to finish!

Feel free to make these dishes all your own too.  I would have loved to have added some leftover chicken breasts as that would have tasted great tossed together with the pasta!  I do also want to note that this dish definitely allowed us leftovers since we ate this with the salad which was perfect because we didn’t have to worry about lunch the next day.  Oh and re-heating this pasta after it marinated in the pesto overnight??  Um perfection.  It tasted even better the next day!

I had actually never cooked with green garlic (otherwise known as “young garlic”) before, but that is yet another reason why I love cooking with Blue Apron.  Every box creates a new experience and I’m constantly forced to try new things!  Just a quick little tip – I found that green garlic burns pretty easily so make sure that your heat isn’t too high.  Luckily I caught this pretty quick so the garlic was still really flavorful.  After tossing the pasta with the pesto we topped our dish with a little Parmesan cheese and roasted almonds which, YES, were all included in our box as well!

Now let’s talk about this side salad.  I must say I was pretty impressed at how much salad it actually made for just the two of us and OH that creamy dressing made using lemon juice and mascarpone cheese was absolutely delicious!  We topped the salad with shredded carrot, crunchy sunflower seeds and a little Parmesan cheese that we had left over.  Everything was super light and fresh which was the perfect recipe to kick off spring!

Now this is just one of the many recipes that you can choose from and Blue Apron is constantly adding new seasonal dishes to their menu every week!  With so many delicious recipes each week, you know you’ll never get bored of preparing the same dish and every meal is between 500 to 800 calories per person!  I do want to note that the individual portions for each person are rather on the large side and we are usually always able to enjoy leftovers so that calorie count is pretty good!

The other meals we received in our box were spice rubbed pork with red onions and black beans as well as chicken meatballs over fregola sarda and kale.  My husband LOVED the pork while my favorite was this pasta dish and the meatballs.  This is one of the great things about Blue Apron, you get such a variety of meals so you aren’t stuck with the same old thing each week AND it forces you to step outside your comfort zone and try something new.  I had actually never heard of fregola sarda before, which is essentially small round balls of pasta (similar to couscous) and they paired so perfectly with the pasta sauce and meatballs!
