You guys this might be the easiest recipe you’ll make all week.
Overnight oats are totally my jam because they’re simple to throw together AND you make them the night before so you can just grab them and go in the mornings! The toppings are what really make these oats and I love using an assortment of banana slices and coconut flakes along with a dollop of peanut butter, but the REAL addition that I’m utterly obsessed with is adding in chunks of Peanut Butter Cookie Larabar! Not only are these bars delicious, but they are made with just a few simple, wholesome ingredients that you can feel good about eating. They also happen to be on sale right now at Whole Foods through July 11th so snag yourself some of these goodies!
The other great thing about overnight oats is that there is absolutely NO COOKING involved at all. You just mix all your ingredients together the night before and wake up to a delicious breakfast! Just remember anything you add to these oats will become absorbed overnight so if you like a good crunch you’ll want to wait and mix those in right before eating.

- ½ cup rolled oats
- ½ cup vanilla almond milk
- 1 Tbsp chia seeds
- ½ banana, mashed
- 1½ Tbsp peanut butter
- Toppings: banana slices, coconut flakes, dollop of peanut butter and chunks of Peanut Butter Cookie Larabar
- Combine all ingredients (except for toppings) mixing well, cover tightly with a lid or plastic wrap and refrigerate overnight. In the morning add your toppings and enjoy!
