These delicious Blueberry Oatmeal Breakfast Bars make a quick on-the-go breakfast or snack option that are healthy, kid-friendly and super easy to throw together!
For some reason blueberries have always gone hand in hand with breakfast growing up. I either had them in my pancakes, added them to my cereal or oatmeal, or enjoyed them all gooey and melty in a delicious warm muffin. Blueberries have always been one of my favorite berries so adding them to these delicious breakfast bars was a no-brainer!
Life right now has been pretty hectic (and enjoyably so!) with having a new baby so time management has often become a struggle for me. There are honestly days where the time has passed so quickly that I realized I had actually forgotten to eat! Terrible I know, but I’ve been adjusting to being a new mom and just don’t have the time I used to have to make myself breakfast every morning which is why having something like these oatmeal bars on hand that I can just grab makes a world of difference for me!
The great thing about these breakfast bars is I can make them on a Sunday, along with the rest of my meal prep, while hubby watches the baby, and I’ll have warm delicious oatmeal bars to enjoy all week! You guys these are crazy DELICIOUS and it’s honestly hard not eat the entire pan when they come right out of the oven. They are the perfect combination of chewy yet moist with gooey blueberries in every bite!
How to Make Blueberry Oatmeal Bars
So these are actually super easy to make and you probably already have everything right in your pantry! You basically just whisk all your dry ingredients together in one bowl, whisk all your wet ingredients in another, then add the wet to the dry and mix until just combined. Oat flour has truly become my go-to gluten-free flour because it just makes baked goods a lot fluffier than dense almond flour or coconut flour AND you can easily make it yourself at home!
To make your own oat flour you simply take rolled oats (or instant oats) and blend them in your food processor or blender for about 60 seconds until they resemble a fine, powdery flour – that’s it! You can of course just buy your own oat flour at the store, but this method saves you money and the flour will last up to three months in your pantry. The ratio for oat flour is one cup of oats = one cup of oat flour so it’s pretty easy to measure out.
Once everything is mixed you just fold in your blueberries, pour your batter into an 8×8 inch pan and bake for about 35 to 40 minutes. That’s it!
This recipe makes about 9 large size bars or 16 smaller bars. I prefer cutting mine into smaller bars because I feel less guilty when I eat more than one haha Makes sense right?? Either way you slice them (hehe see what I did there), these are a total hit and your kids will love them too! Great for back-to-school snacks or morning breakfasts. They would also make a delicious dessert with some ice cream on top! Man now I’m hungry.
These bars will last up to a week covered in the fridge or you can individually wrap them and they will last up to 2 months in your freezer!

- 1 cup quick cooking oats
- 1 cup oat flour
- 2 Tbsp brown sugar
- ½ tsp baking soda
- ½ tsp cinnamon
- ¼ tsp salt
- 3 eggs
- ½ cup almond milk
- ¼ cup coconut oil, melted and cooled slightly
- ⅓ cup honey
- 1½ tsp vanilla
- 1 cup blueberries
- Preheat oven to 350 degrees F.
- In a large bowl, whisk together oats, oat flour, brown sugar, baking soda, cinnamon and salt. Set aside.
- In a separate bowl, whisk together eggs, almond milk, coconut oil, honey and vanilla stirring until well-combined.
- Pour the wet ingredients in with the dry ingredients, mixing until just combined then fold in the blueberries.
- Pour blueberry mixture into a prepared 8x8-inch baking dish and bake in the oven for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
- Let the pan sit for 5 minutes then remove from pan and let cool completely on a wire rack. Slice into 16 square bars (or 9 larger bars) and enjoy!
